Ingredients

  • 4 flat pita breads
  • 1 cup shredded chicken, we use rotisserie chicken
  • 10 tablespoons barbecue sauce, divided
  • 1 1/2 cups shredded Mozzarella cheese
  • 1/4 red onion, thinly sliced
  • cilantro, for garnish

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a small bowl, mix chicken with 2 tablespoons of the barbecue sauce.
  3. Spread 2 tablespoons of barbecue sauce evenly onto each pita. Top the pitas evenly with mozzarella cheese, barbecue chicken, and red onion slices.
  4. Place each pita on a large baking sheet. Bake for 10 to 12 minutes, or until cheese is melted.
  5. Remove from oven and garnish with fresh cilantro. Cut into slices and serve immediately.
