BBQ Chicken Salad

BBQ Chicken Salad is a hearty mix of grilled chicken breast, romaine lettuce, black beans, sweet corn, cherry tomatoes, red onion, avocado, and shredded cheese. Ingredients

  • 2-3 chicken breast chopped, grilled, BBQ
  • 6 cups romaine lettuce chopped
  • 1 can black beans drained and rinsed, 15 oz
  • 1 cup sweet corn frozen or fresh grilled
  • 1 cup cherry tomato chopped
  • ½ cup red onion diced
  • 1-2 avocado sliced
  • ½ cup Monterey jack cheese or cheddar cheese; shredded
  • ½ cup tortilla chip optional, crushed
  • BBQ sauce for drizzling (homemade or store-bought)
  • ranch dressing (homemade or store-bought)

Instructions

  1. Grill BBQ chicken, if you haven’t already.
  2. Prep salads by adding lettuce and the salad toppings to three bowls. Start with chopped lettuce and then add grilled chicken, black beans, corn, tomatoes, red onion, avocados and cheese.
  3. Add ranch dressing and add a drizzle of BBQ sauce, if using.
  4. Top with crushed tortilla chips, if using and serve.
