BBQ Chicken Salad
Description
In this BBQ Chicken Salad, chopped grilled chicken breasts seasoned with barbecue sauce serve as the protein base atop a bed of chopped romaine lettuce. Black beans, sweet corn, cherry tomatoes, diced red onion, and sliced avocado add color, nutrition, and varied textures. Shredded Monterey Jack or cheddar cheese contributes richness, while ranch dressing and a drizzle of BBQ sauce bring creamy and tangy layers of flavor.
The optional addition of crushed tortilla chips adds crunch and a slight salty note, enhancing mouthfeel. This assembly makes a filling salad suitable for lunch or a light dinner, combining freshness with smoky and creamy elements in each bite.
The salad works well served immediately after assembling. Grilling the chicken in advance speeds preparation.
