BBQ Pineapple Shrimp

BBQ Pineapple Shrimp combines spicy shrimp sautéed with sweet pineapple and red bell pepper, all coated in a bubbly barbecue sauce. Seasoned with cayenne, salt, and pepper, the shrimp cook quickly in butter or oil, retaining their tender texture. The fresh pineapple adds tropical sweetness, while the barbecue sauce provides a tangy, flavorful glaze. Served over rice or quinoa, it’s a filling, balanced dish with a blend of spicy, savory, and sweet components.

Ingredients

  • 12 oz Shrimp or thawed if frozen, fresh, raw
  • 8 oz pineapple fresh
  • 1 red bell pepper
  • 1 TBSP oil plus extra as needed, or butter
  • ¼ ground cayenne pepper
  • 1 tbsp butter
  • ⅓ cup barbecue sauce (I used a spicy one - yum!)
  • salt to taste
  • black pepper to taste
  • 1 TBSP green onion (optional)

Instructions

  1. Clean and peel shrimp, defrosting if needed. Lately we've been buying frozen, deveined, easy-peel shrimp. All I have to do is defrost, peel, and cook! You can also buy your shrimp already peeled if you'd like!
  2. Pat shrimp dry and season with cayenne, salt, and pepper.
  3. Heat a large pan or skillet to medium-high heat with 1 TBSP of butter or oil and sauté your shrimp. Cook on each side for a minute until shrimp curl and become opaque. The cook time will depend on the heat setting you choose and the size of your shrimp, but regardless they’ll be perfectly cooked in a matter of minutes.
  4. Transfer shrimp to a plate and add a little oil to your pan. Add peppers and cook until tender, adding the pineapple towards the end. 
  5. Next add your barbecue sauce (I chose a spicy one - YUM!) and stir it up. Once it's hot and bubbly in the pan, add your shrimp back in and mix it all together. Give shrimp an additional minute to warm back up with the sauce and get ready to dive in!

Notes

  • This dish is well suited to serving over rice, fried rice, cauliflower rice, or quinoa for a complete meal.
  • Use spicy barbecue sauce for a bolder flavor, or a sweet one with added cayenne pepper to maintain heat.
