BBQ Pineapple Shrimp
Description
BBQ Pineapple Shrimp features peeled and seasoned shrimp cooked until opaque and curled, then kept warm while peppers are sautéed to tender. Fresh pineapple is added near the end of cooking the vegetables to maintain brightness and a slight bite. A barbecue sauce, preferably with a spicy profile, simmers in the pan to create a rich, glossy coating. Finally, shrimp return to the sauce to meld flavors and warm through.
The shrimp are flavored with cayenne pepper alongside salt and black pepper, giving a mild heat that contrasts nicely with the sweetness of pineapple and the tangy barbecue sauce. Butter or oil provides a creamy mouthfeel and helps the ingredients caramelize slightly on the pan.
Serving suggestions include rice, fried rice, cauliflower rice, or quinoa, which soak up the flavorful sauce well. Optional garnishing with green onions adds freshness. The recipe allows variations in barbecue sauce choice and heat level, adjusting cayenne as preferred for spice.

Ingredients
- 12 oz Shrimp or thawed if frozen, fresh, raw
- 8 oz pineapple fresh
- 1 red bell pepper
- 1 TBSP oil plus extra as needed, or butter
- ¼ ground cayenne pepper
- 1 tbsp butter
- ⅓ cup barbecue sauce (I used a spicy one - yum!)
- salt to taste
- black pepper to taste
- 1 TBSP green onion (optional)
Instructions
- Clean and peel shrimp, defrosting if needed. Lately we've been buying frozen, deveined, easy-peel shrimp. All I have to do is defrost, peel, and cook! You can also buy your shrimp already peeled if you'd like!
- Pat shrimp dry and season with cayenne, salt, and pepper.
- Heat a large pan or skillet to medium-high heat with 1 TBSP of butter or oil and sauté your shrimp. Cook on each side for a minute until shrimp curl and become opaque. The cook time will depend on the heat setting you choose and the size of your shrimp, but regardless they’ll be perfectly cooked in a matter of minutes.
- Transfer shrimp to a plate and add a little oil to your pan. Add peppers and cook until tender, adding the pineapple towards the end.
- Next add your barbecue sauce (I chose a spicy one - YUM!) and stir it up. Once it's hot and bubbly in the pan, add your shrimp back in and mix it all together. Give shrimp an additional minute to warm back up with the sauce and get ready to dive in!

- This dish is well suited to serving over rice, fried rice, cauliflower rice, or quinoa for a complete meal.
