BBQ Pulled Pork and “Cornbread” Waffles
This makes 4 total servings of 1 waffle and 4oz. of pulled pork. Each serving comes out to be 556 Calories, 45.3g Fats, 5.7g Net Carbs, and 26.4g Protein.
Ingredients
- 16 oz. pulled pork Recipe Here
- 1 cup almond flour
- 1 tsp. baking powder
- ½ tsp. salt
- 3 large eggs
- 2 tbsp. butter
- ¼ cup sour cream
- 2 tbsp. golden flaxseed meal
- 1 tbsp. psyllium husk
- ¼ cup coconut milk from carton
- 2 tbsp. chopped red pepper
- ¼ cup BBQ sauce Recipe Here
Instructions
- Make the BBQ Sauce and then make the waffle batter by mixing the wet ingredients into the dry.
- Pour the batter on to the waffle maker and let cook.
- While cooking, add pork to a pan on medium-low heat with about 3/4 of the BBQ sauce.
- Once waffles are done, spoon pork onto waffle and top with extra bbq sauce. Serve with extra sour cream if you'd like!
