Ingredients

  • 16 oz. pulled pork Recipe Here
  • 1 cup almond flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 3 large eggs
  • 2 tbsp. butter
  • ¼ cup sour cream
  • 2 tbsp. golden flaxseed meal
  • 1 tbsp. psyllium husk
  • ¼ cup coconut milk from carton
  • 2 tbsp. chopped red pepper
  • ¼ cup BBQ sauce Recipe Here

Instructions

  1. Make the BBQ Sauce and then make the waffle batter by mixing the wet ingredients into the dry.
  2. Pour the batter on to the waffle maker and let cook.
  3. While cooking, add pork to a pan on medium-low heat with about 3/4 of the BBQ sauce.
  4. Once waffles are done, spoon pork onto waffle and top with extra bbq sauce. Serve with extra sour cream if you'd like!
