Ingredients

  • 4-5 cups pulled pork store bought or homemade
  • 1 1/2 cups BBQ sauce your favorite brand
  • 1 tablespoon Worcestershire sauce
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 3 large potatoes peeled and diced
  • 1/4 cup heavy cream
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups grated cheddar cheese
  • 1 tablespoon chopped parsley

Instructions

    Cup of Yum
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the BBQ pulled pork, BBQ sauce, Worcestershire sauce, frozen peas, and frozen corn. Stir until everything is evenly coated.
  3. Spread the pulled pork mixture evenly into the bottom of a 9x13-inch baking dish or similar-sized oven-safe dish.
  4. Place the diced potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes. Drain the cooked potatoes and return them to the pot. Add the heavy cream, butter, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.
  5. Spoon the mashed potatoes evenly over the pulled pork mixture in the baking dish. Use a spatula to spread them smoothly or create decorative swirls on top.
  6. Sprinkle the grated cheddar cheese evenly over the mashed potatoes.
  7. Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and golden, and the filling is heated through.
  8. Remove the dish from the oven and sprinkle with chopped parsley for a fresh, vibrant garnish.
  9. Let the shepherd’s pie cool for a few minutes before serving. Pair with a fresh side salad or steamed vegetables for a complete meal.
  10. Store leftovers in the refrigerator for up to 5 days, or freeze for up to 3 months.
