Beef and Broccoli

Beef and Broccoli is a popular dish in Chinese and Chinese-American cuisines, and consists of beef strips sautéed with crunchy broccoli, and an aromatic sauce.

Ingredients

  • 20 oz sirloin cut into thin strips, or beef whiting
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon Shaoxing rice wine or cooking sherry
  • 2 cloves garlic , grated
  • 2 green onions (spring onions), cut into very thin slices
  • 2 tablespoons vegetable oil neutral
  • 2 teaspoons ginger finely grated fresh
  • 1 large broccoli cut into florets, head
  • 4 oz beansprouts
For the sauce
  • 4 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 4 tablespoons water , or low-sodium beef broth
  • 2 teaspoons brown sugar
  • 2 tablespoons Chinkiang vinegar black rice vinegar
  • 2 teaspoons sesame oil
  • ground white pepper freshly ground
  • 2 tablespoons cornstarch

Instructions

  1. In a large bowl, mix the beef strips and Shaoxing (or sherry). Set aside.
  2. In another large bowl, whisk together all the ingredients for the sauce until the cornstarch is dissolved. Set aside.
  3. Heat the oil in a wok over a high heat, and as soon as it begins to reach its smoke point, add the beef, and stir fry for about 2 minutes, or until lightly browned.
  4. Add the onion, garlic and ginger, and stir fry for another minute.
  5. Add the broccoli and continue to stir fry for 1 minute.
  6. Add the beansprouts, and stir fry for 1 minute.
  7. Finally, stir in the sauce, and simmer over medium heat for 2 minutes.
  8. Serve immediately with sautéed noodles or steamed rice.
