Ingredients

Meatballs
  • 450 gms ground beef 1 lb
  • 50 gms parmigiano reggiano finely grated, 1.75 oz
  • 100 gms breadcrumbs 3.5 oz
  • 1 tbsp parsley chopped
  • 1 pinch nutmeg grated
  • 1 tsp salt
  • 1 pinch black pepper
Agrodolce (Italian sweet and sour) sauce
  • 1 tbsp parsley chopped
  • 2 tbsp extra virgin olive oil
  • 4 anchovies
  • 1 onion finely chopped
  • 1 celery chopped, stalk
  • 4 tbsp tomato puree passata
  • 2 tbsp raisins
  • 2 tbsp pine nuts
  • 1 bay leaf
  • 2 sage leaves
  • 1 tsp rosemary dried
  • 30 ml white wine 1 oz
  • 30 ml water 1 oz
  • 25 ml red wine vinegar 0.85 oz
  • 1 tbsp sugar
  • salt to taste
