Beef Stroganoff

Ingredients

  • 8 ounces wide egg noodles (cooked according to package instructions)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 16 ounces beef sirloin (cut into thin strips)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon ground thyme
  • 2 tablespoons Worcestershire sauce 
  • 16 ounces sliced mushrooms
  • 1 cup Stonyfield Whole Milk Plain Greek Yogurt
  • 2 clove garlic (minced)
  • minced parsley (to garnish)

Instructions

  1. Cook noodles according to package instruction; set aside.
  2. Heat a deep skillet over medium-high heat and drizzle with olive oil. Sprinkle beef with salt and pepper then saute in the pan until a slight crusts forms, about 2-3 minutes per side. Remove beef from pan and set aside.
  3. Add mushrooms to the pan along with thyme and Worcestershire sauce. Saute until mushrooms start to caramelize, about 3-4 minutes. Sprinkle with white flour and stir well before adding the beef back to the pan, along with any reserved cooking juices.
  4. Stir in the cooked noodles, yogurt, and garlic. Check for seasoning and add additional salt and pepper to taste. Sprinkle with minced parsley to serve.
