Beer Can Chicken
Beer Can Chicken is a whole bird seasoned with a blend of dried herbs and spices, roasted upright with potatoes and carrots surrounding it. This method steams the chicken from the inside, helping it cook evenly while the exterior becomes flavorful and roasted through. The result is moist poultry with crispy skin paired with tender roasted vegetables.
Ingredients
- 3-4 pound chicken , giblets removed and patted dry
- 2 teaspoons kosher salt
- 1 tablespoon garlic powder
- 1 teaspoon basil dried
- 1 teaspoon oregano dried
- 1 teaspoon paprika
- 1 teaspoon thyme ground
- 1/2 teaspoon black pepper finely ground
- 8 Yukon Gold potatoes halved, small
- 3 carrot cut into 2 inch chunks
Instructions
- Preheat oven 400 degrees F
- Place the chicken on the upright roasting rack (or mostly empty soda/beer can) in a large shallow pan.
- In a small bowl mix together salt, garlic powder, basil, oregano, paprika and thyme.
- Rub it all over the chicken.
- Add the potatoes and carrots around the chicken in the pan.
- Roast for 75-90 minutes or until the thickest part of the thighs are at 165 degrees with a meat thermometer.
