Ingredients

  • 2½ Lbs beef ribs or 8 ribs (or 2 lbs chuck roast cut into even pieces)
  • 1 medium onion (chopped)
  • 2 cloves garlic (diced)
  • 1 teaspoon black pepper
  • 1 can beer (or 1 cup beef broth)
  • 1-2 cups water
Glaze
  • ½ cup honey
  • ¼ cup vegetable oil
  • ½ cup beer
  • 1 Tablespoon Dijon style mustard

Instructions

    Cup of Yum
  1. In a large pot add the ribs with the onion, garlic, pepper and beer. Add just enough water to cover the ribs.
  2. Simmer the ribs for 40-45 minutes just until tender.
  3. Meanwhile add all the glaze ingredients to a small pot and bring to a boil. Cook for about 5 minutes until the sauce thickens. Set aside.
  4. Drain the ribs and place them on a foil lined baking sheet. Sprinkle them with salt and pepper and brush the ribs with a thick coat of the glaze.
  5. Grill the ribs on the preheated barbecue for 10-15 minutes basting and turning frequently until desired crispiness. These can also be done in the oven broiling at 375° for 5-10 minutes to crisp them up.
  6. Serve with a great salad of your choice.
