- 8 oz arugula
- 3 oz goat cheese
- 1 large apple
- 1 medium cooked beet
- 1/2 cup roasted walnuts
- 1/3 cup dried cranberries
- 1/3 cup beet dressing
Instructions
- Make a batch of beet salad dressing.
- Assemble the salad by placing the arugula leaves at the bottom of a large bowl. Top them with slices of apple and diced beets.
- Top the salad with chunks of goat cheese.
