Ingredients

  • 4 red beet peeled
  • 6 cups mixed greens
  • 1/2 cup walnuts chopped, candied
  • 1/2 cup goat cheese
Citrus Vinaigrette
  • 1/2 cup olive oil
  • 1/4 cup orange juice
  • 1/3 cup balsamic vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground

Instructions

  1. Add the beets to a saucepan and cover with water.
  2. Boil for 25-30 minutes until tender, then put beets in ice water to cool quickly.
  3. Chop the beets into cubes.
  4. To a large bowl add the mixed greens, chopped beets, candied walnuts and goat cheese crumbled on top.
  5. In a small bowl whisk together the olive oil, orange juice, balsamic vinegar, kosher salt and black pepper.
  6. Pour dressing over the salad and serve.
