Beetroot Chocolate Protein Balls
These protein balls combine cooked beetroot with rolled oats, peanut butter, cocoa powder, and optional protein powder to form a rich, dense snack. Rolled into small balls and coated with cocoa, coconut, or seeds, they offer a moist texture and chocolatey flavor with subtle earthiness from the beetroot, ideal for nutritious snacking.
Ingredients
- 75 g rolled oats 2/3 cup
- 1 beetroot cooked and cooled or use vacuum sealed not in vinegar (about 75g)
- 125 g peanut butter or other nut butter, 1/2 cup
- 2 tablespoons cocoa powder unsweetened
- 1 tablespoon agave syrup or maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon protein powder optional) look for vegan if required, vanilla
For rolling (optional)
- 1 tablespoon cocoa powder
- 1 tablespoon linseeds
- 1 tablespoon coconut milled linseeds, etc
Instructions
- In a food processor, whiz the oats until they are fine. Add all other ingredients and whiz to combine into a thick paste.
- Roll into teaspoon-sized balls, roll in coconut, cocoa etc… and store the beetroot bliss balls in the refrigerator or freezer.
Notes
- Try rolling the balls in milled linseeds, cocoa powder, coconut, or chopped nuts for variety.
