Beetroot Chocolate Protein Balls

These protein balls combine cooked beetroot with rolled oats, peanut butter, cocoa powder, and optional protein powder to form a rich, dense snack. Rolled into small balls and coated with cocoa, coconut, or seeds, they offer a moist texture and chocolatey flavor with subtle earthiness from the beetroot, ideal for nutritious snacking.

Description

Beetroot Chocolate Protein Balls mix cooked and cooled beetroot with ground oats, peanut butter, cocoa powder, agave syrup, vanilla, and an optional protein powder. Processed until combined into a thick paste, the mixture is rolled into small balls, then optionally coated with cocoa powder, milled linseeds, or shredded coconut.

The resulting protein balls have a moist yet firm texture with an earthy sweetness from the beetroot balanced by the chocolate and nut butter's richness. They can be refrigerated or frozen to maintain freshness and are suitable as a convenient energy-boosting snack.

Optional coatings add texture contrast and are interchangeable based on preference and ingredient availability. The recipe can adapt to various nut butters and sweeteners as needed.
