Beetroot Chocolate Protein Balls

You only need 8 ingredients and 10 minutes to whiz up these chocolate beetroot bliss balls. They're full of protein, tasty and so easy. Store in the fridge or freezer and grab a few for breakfast or a snack. Vegan.

Ingredients

  • 75 g (⅔ cup) rolled oats
  • 1 beetroot cooked and cooled or use vacuum sealed not in vinegar (about 75g)
  • 125 g (½ cup) peanut butter or other nut butter
  • 2 tablespoons cocoa powder unsweetened
  • 1 tablespoon agave or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon vanilla protein powder (optional) look for vegan if required
For rolling (optional)
  • 1 tablespoon coconut, cocoa powder, milled linseeds etc...

Instructions

  1. In a food processor, whiz the oats until they are fine. Add all other ingredients and whiz to combine into a thick paste.  
  2. Roll into teaspoon-sized balls, roll in coconut, cocoa etc… and store the beetroot bliss balls in the refrigerator or freezer.
