Ingredients
- 150 ml orange juice
- Juice of 2 lemons
- 1 tsp vanilla essence
- 0.5 tsp ground ginger
- 0.5 tsp ground cardamom
- 550 g sugar
- 600 g grated beetroot
- 1 apple peeled and finely diced
- 550 g sugar
Instructions
- Mix together orange juice, lemon juice, vanilla, ginger and ground cardamom.
- Mix in the sugar followed by the grated beetroot and apple
- Add the beetroot relish mixture into a pot and cover.
- After 20 min, open the lid and let the relish cook till finished mixing regularly.

Notes
- If you want this Beetroot Relish to be a little sharper then feel free to add a little less sugar and a little bit more lemon.
- Whilst I call this a beetroot relish, it actually doubles up as a beetroot jam also. Feel free to add more warming jam type spices to this recipe instead.
