Ingredients

  • 2 cups rolled oats old fashioned
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt sea salt
  • ½ cup almond milk or your fave milk, unsweetened
  • ½ cup applesauce
  • ¼ cup maple syrup or honey
  • 2 Tablespoons Flaxseed ground
  • 2 teaspoons coconut oil melted
  • 1 teaspoon vanilla extract
  • 1 cup berries I used blueberries and chopped strawberries, fresh; plus ½ cup more for topping

Instructions

  1. Preheat oven to 375°F.
  2. Combine all ingredients except for the berries in a large bowl. Stir until combined and gently fold in 1 cup of berries.
  3. Pour into a 8x8 square baking pan lined with parchment. Evenly spread batter in pan and top with remaining berries. I think it looks really pretty with sliced strawberries on top.
  4. Cook for 40-45 minutes or until bars are cooked through and hold their shape.
  5. Remove from the oven, cool and then cut into 6 bars and enjoy.
  6. Store leftover bars in the fridge for up to 1 week. Enjoy cold or reheat in a toaster oven.

Notes

  • Choose gluten-free oats if needed for dietary restrictions.
  • Maple syrup can be replaced with honey as a natural sweetener alternative.
  • Unsweetened vanilla almond milk works well, but other milk types may be used based on availability.
  • Applesauce can be substituted with mashed banana, approximately 1/4 cup, if desired.
  • Butter can replace coconut oil if preferred.
  • Ground flaxseed may be swapped for one whole egg for binding.
  • Fresh berries are preferable to frozen for less moisture release, but frozen berries can be used if needed.
