Berry Baked Oatmeal Bars

Berry Baked Oatmeal Bars blend rolled oats with fresh berries, maple syrup, applesauce, and spices to create hearty, baked squares with a moist texture. The oats provide a chewy base while the berries add bursts of fruity sweetness and color. The bars are lightly sweetened and spiced with cinnamon and can be refrigerated for easy snacking or breakfast. The recipe accommodates ingredient substitutions and balances whole-grain nutrition with a tender crumb.

Description

These baked oatmeal bars combine old-fashioned rolled oats with baking powder, cinnamon, salt, and a liquid mixture of almond milk, applesauce, and maple syrup. Ground flaxseed and coconut oil contribute moisture and texture, while vanilla adds subtle flavor. Fresh blueberries and chopped strawberries are folded into the batter with more berries scattered on top before baking. The mixture bakes into a firm but tender bar that holds together well for cutting.

The bars offer a warm, slightly sweet, and lightly spiced flavor profile with a satisfying chew from the oats and juicy notes from the berries. Baking concentrates the fruit’s sweetness and softens the oats, creating a balanced texture that isn’t overly dense. The blend of ingredients yields a comforting, wholesome snack or breakfast option.

Once cooled, the bars can be sliced into portions and stored in the refrigerator for up to one week. They can be enjoyed cold or warmed. Substitutions like using honey for maple syrup, mashed banana for applesauce, or different types of milk are possible depending on preferences or dietary needs. Using fresh berries minimizes excess moisture to maintain bar structure. The recipe is straightforward, suitable for batch prep.

Choose gluten-free oats if needed for dietary restrictions.Maple syrup can be replaced with honey as a natural sweetener alternative.Unsweetened vanilla almond milk works well, but other milk types may be used based on availability.Applesauce can be substituted with mashed banana, approximately 1/4 cup, if desired.Butter can replace coconut oil if preferred.Ground flaxseed may be swapped for one whole egg for binding.Fresh berries are preferable to frozen for less moisture release, but frozen berries can be used if needed.

  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt sea salt
  • ½ cup almond milk or your fave milk, unsweetened
  • ½ cup applesauce
  • ¼ cup maple syrup or honey
  • 2 Tablespoons Flaxseed ground

  • 1 cup berries I used blueberries and chopped strawberries, fresh; plus ½ cup more for topping

Instructions

  2. Combine all ingredients except for the berries in a large bowl. Stir until combined and gently fold in 1 cup of berries.
  3. Pour into a 8x8 square baking pan lined with parchment. Evenly spread batter in pan and top with remaining berries. I think it looks really pretty with sliced strawberries on top.
  4. Cook for 40-45 minutes or until bars are cooked through and hold their shape.
  5. Remove from the oven, cool and then cut into 6 bars and enjoy.
  6. Store leftover bars in the fridge for up to 1 week. Enjoy cold or reheat in a toaster oven.
