Berry Crostini with Whipped Goat Cheese

Patriotic berry crostini with an incredibly creamy goat cheese spread. And you won’t believe how easy this is to make!

Ingredients

  • ½ cup strawberries thinly sliced
  • ¼ cup blueberries
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon sugar
  • 1 baguette thinly sliced, toasted
  • 2 tablespoons olive oil
  • ½ cup crumbled goat cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon confectioners’ sugar
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine strawberries, blueberries, lemon juice and sugar; set aside.
  3. Place baguette slices onto prepared baking sheet; drizzle with olive oil. Place into oven and bake for 8-10 minutes, or until golden brown.
  4. In a medium bowl, whisk together goat cheese, heavy cream, confectioners’ sugar and vanilla until smooth.
  5. Spread goat cheese mixture on each baguette slice and top with 3 slices strawberries and 1 blueberry.
  6. Serve immediately.
