Berry salad with red onions, arugula, nuts and pomegranate arils
This berry salad is infinitely variable. The trifecta at its base involves greens, berries and nuts - everything is changeable, and nothing is sacred. The dressing here is tangy but delicate; feel free to increase the vinegar if you want something with more bite.

Ingredients
- 1 package arugula or another green mix of your choice
- 1 package blackberries or other berries of your choice
- ½ onion sliced
- Arils of ½ a pomegranate
- ¼ cup Nuts of your choice chopped and toasted - pistachios, almonds or peanuts are my favourites
- 4 TBs olive oil
- 2 TBs white wine vinegar or raspberry vinegar
- 1 teaspoon honey
- 1 teaspoon mustard
- salt & pepper to taste
Instructions
- Combine olive oil, vinegar, honey, mustard, salt and pepper in a jar, and shake until well combined.
- In a large bowl, layer remaining salad ingredients. Drizzle with dressing, and mix well to combine. Serve immediately.
