Berry Spinach Salad Recipe

This berry salad is the perfect side dish or quick weeknight dinner with your favorite protein. Made with fresh berries and tangy feta cheese!

Ingredients

  • 6 cups spinach
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries
  • 1/2 cup pecans
  • 1/2 cup crumbled Feta cheese
  • 1/3 cup olive oil
  • 1/4 cup honey balsamic vinegar
  • 1 garlic clove

Instructions

  1. In a skillet over medium-low heat, toast the pecans until golden and fragrant. Set them aside to cool at room temperature.
  2. Place the spinach, blueberries, sliced strawberries, toasted pecans, and feta cheese in a large bowl.
  3. In a small bowl, whisk the olive oil with balsamic vinegar and garlic.
  4. Toss the salad in the dressing and serve immediately!
