Best Bran Muffins Ever

Finally, a bran muffin that actually tastes good! This recipe is full of fiber and has a secret ingredient (coconut oil) that makes all the difference.

Ingredients

  • 1 1/2 cups 100% all bran cereal
  • 1 cup buttermilk
  • 1/3 cup melted coconut oil
  • 1 large egg
  • 2/3 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

  1. Preheat the oven to 450°F. Lightly spray a muffin pan with nonstick spray or line with paper cups.
  2. In a medium-sized mixing bowl, soak the bran cereal in buttermilk for about 10 minutes until it becomes soggy.
  3. Add melted coconut oil, egg, brown sugar, vanilla extract, flour, baking soda, baking powder, and salt to the bowl. Stir thoroughly to combine. The mixture will be thick.
  4. Divide the batter equally among the 12 muffin cups, filling each almost to the top.
  5. Bake in the preheated oven at 450°F for 5 minutes. Then, without opening the oven door, reduce the heat to 350°F and continue baking for another 8 to 10 minutes.
  6. Remove the muffins from the pan and cool them on a wire rack.
