Ingredients

  • 1 pound heirloom, Roma, or cherry tomatoes ripe and cut into half
  • 1 1/2 cup fresh mozzarella sliced
  • 1/2 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar reduction
  • 2 tablespoons balsamic vinegar optional
  • 2 tablespoons pesto optional
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Slice the tomatoes and cheese and arrange overlapping each other on a platter.
  2. Drizzle with olive oil, balsamic vinegar reduction, pesto, and balsamic vinegar, and season with salt and pepper to taste.
  3. Sprinkle with fresh basil leaves and serve immediately.
