Ingredients

  • 1 tsp olive oil
  • 6 pieces chicken thigh or breast
  • ½ cup unsalted butter
  • ½ tsp minced garlic 
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1 tsp oregano
  • ¾ tsp sea salt
  • ½ tsp ground black pepper
  • 2 cups heavy whipping cream
  • 4 oz cream cheese
  • 1 cup grated Parmesan cheese
  • 8 oz dry fettuccine or pasta of your choice

Instructions

  1. Bring a pot of salted water to a boil and cook pasta according to package directions, drain and set aside.
  2. In a medium saucepan heat oil till medium high. Season the chicken with salt and pepper. Cook chicken till browned on both sides and cooked through. Set aside.
  3. Add the butter to the pan and let it melt. When hot and frothy add garlic and cook for about 3 minutes till browning and fragrant. 
  4. Add the garlic powder, thyme, oregano, salt, and pepper. Stir to combine. 
  5. Add the heavy cream and cream cheese. Whisk and heat until smooth. 
  6. Add the parmesan cheese, stir and melt about 3 minutes till it thickens. 
  7. Toss the sauce with the cooked pasta and top with cooked chicken.
