Ingredients
- 4 ounces feta cheese
- 1 tablespoon olive oil
- 2 tablespoons walnuts
- ⅓ cup Dill chopped
- 1 English cucumber thinly sliced
- 16 slices sandwich bread
Instructions
- Place the feta, walnuts, and olive oil in the bowl of a small food processor. Blend until the cheese mixture is creamy.
- Transfer the cheese mixture to a bowl and add the chopped dill. Mix using a spoon.
- Thinly slice the cucumbers using a chef's knife or mandoline.
- Spread a generous layer of the feta mixture onto each slice of the sandwich bread. Arrange the cucumbers on 8 bread slices and have them overlap slightly.
- Top the cucumbers with the remaining 8 slices of bread and press gently to have the cucumbers stick to the cheese. You should have 8 cucumber sandwiches.
- Remove the crusts of the sandwiches. Cut the sandwiches into triangles or squares and arrange on a plate.

- Salt the Cucumbers: You can skip this step if you’re serving the tea sandwiches immediately. However, if you’re making these ahead, salt the cucumber slices and place them in a colander over a large bowl and let them sit for 30 minutes to release their excess moisture. Then rinse them with cold water and dry them completely using a kitchen towel. This way, the cucumbers will keep crispy for longer.
- Spread to Cucumber Ratio: Spread a good layer of the feta mixture on the top and bottom bread slices so the cucumber slices won’t touch the bread directly.
