Ingredients

  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ¾ teaspoon pumpkin pie spice
  • ½ teaspoon salt heaping
  • 1 cup pumpkin puree (NOT pumpkin pie filling)
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla
  • 1 egg
  • 2 cups semi sweet chocolate chips

Instructions

  1. Preheat oven to 350. Lightly grease a baking sheet with cooking spray or line with a nonstick baking mat.
  2. In a medium bowl whisk together flour, cinnamon, salt, baking soda, and pumpkin pie spice.
  3. In a second, larger bowl combine pumpkin puree, sugar, oil, vanilla, and egg and mix until smooth.
  4. Add dry ingredients to wet ingredients and mix until just combined (don't over-mix). Stir in chocolate chips.
  5. Use a cookie scoop or tablespoon to drop mounds of cookie dough onto prepared baking sheet. Bake for 10-12 minutes (my perfect personal time is 11 minutes) until tops no longer look "wet". Remove from oven and allow to cool completely on baking sheet. Store in airtight container at room temperature up to 5 days.

Notes

  • Pro Tip: to make sure the chocolate chips are evenly distributed I like to stir in half of them, and then poke the other half into the tops of the scoops of batter before they are baked. this also makes them look pretty!
