Best-Ever Banana Waffles

Ingredients

  • 1 ¼ cups flour
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 tablespoons sugar
  • 1 egg
  • 1 banana mashed (about 1 cup)
  • 1 cup milk
  • ½ teaspoon vanilla extract
  • ¼ cup melted butter
  • maple syrup for serving
  • chopped walnuts for serving, optional
  • sliced bananas for serving, optional

Instructions

  1. Preheat the waffle iron.
  2. Whisk together the flour, baking powder, salt, and sugar in a large bowl.
  3. Add the milk, egg, butter, mashed banana, and vanilla to the dry ingredients, and mix until smooth. *Waffle batter is a little thinner in consistency than pancake batter. 
  4. Grease the waffle iron with cooking spray or melted butter, if needed. 
  5. Pour the waffle batter into the waffle iron and cook until the waffles are golden on both sides and easily removed from the iron. Repeat with remaining waffle batter.
  6. Serve the waffles topped with additional sliced bananas, chopped walnuts, if using, and maple syrup.
