- 1 ¼ cups flour
- 3 teaspoons baking powder
- ¼ teaspoon salt
- 2 tablespoons sugar
- 1 egg
- 1 banana mashed (about 1 cup)
- 1 cup milk
- ½ teaspoon vanilla extract
- ¼ cup melted butter
- maple syrup for serving
- chopped walnuts for serving, optional
- sliced bananas for serving, optional
Instructions
- Preheat the waffle iron.
- Whisk together the flour, baking powder, salt, and sugar in a large bowl.
- Add the milk, egg, butter, mashed banana, and vanilla to the dry ingredients, and mix until smooth. *Waffle batter is a little thinner in consistency than pancake batter.
- Grease the waffle iron with cooking spray or melted butter, if needed.
- Pour the waffle batter into the waffle iron and cook until the waffles are golden on both sides and easily removed from the iron. Repeat with remaining waffle batter.
- Serve the waffles topped with additional sliced bananas, chopped walnuts, if using, and maple syrup.
