Ingredients

  • 1 (9-inch) unbaked pie crust
  • 1/2 cup salted butter
  • 1 cup light corn syrup
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 large eggs beaten
  • 1 1/2 cups pecan halves or chopped

  1. Preheat the oven to 325°F (163°C). Place 1 (9-inch) unbaked pie crust in a 9-inch pie dish.
  2. Melt 1/2 cup salted butter in a medium saucepan over medium heat. Stir in 1 cup light corn syrup, 1 cup brown sugar, 1 teaspoon vanilla extract, and 1/2 teaspoon salt. Cook, stirring constantly, until the mixture is smooth and combined, about 2–3 minutes.
  3. Remove the pan from the heat. Lightly beat 4 large eggs. Gradually whisk the beaten eggs into the butter mixture until fully incorporated. Then stir in 1 1/2 cups pecan halves.
  4. Pour the filling into the prepared pie crust, spreading it evenly.
  5. Bake in the preheated oven for 50–60 minutes, or until the filling is set and a knife inserted into the center comes out clean. Check the pie after 30 minutes, and if the crust is browning too quickly, cover the edges with foil or a pie crust shield.
  6. Allow the pie to cool completely on a wire rack before slicing. Serve plain, with whipped cream, or with vanilla ice cream.
