Ingredients

  • 1 Lb smoked sausage
  • 1 Tbs olive oil

Instructions

    Cup of Yum
  1. Preheat the grill to medium heat.
  2. Cut the sausage into sections that are 3-4 inches long and then cut in half again, butterfly style. Do not cut all the way through. Cut so that the sausage opens up like a book.
  3. Using the Olive oil, rub each pieces of sausage with oil just enough to make the outside surface shiny. 1 Tbs of oil should do the entire pound of sausage.
  4. Place the sausage sections on the grill and allow to grill for 3-4 minutes on each side. Heat to internal temperature of 145 for precooked sausage. 165 for previously uncooked or raw sausages (see package).

Notes

  • Following the simple and basic recipe below, you'll end up with terrific sausage, but there are a few other tricks you might try before taking your sausage to the bbq pit! Try marinating in some soy sauce or worcestershire sauce mixed with white pepper, dijon mustard and a dash of honey or brown sugar. Allow to marinate for 20 minutes and then grill! It's just the best thing!
  • Serve on a Hawaiin Roll or a Brioche Bun. Those sweet roll flavors enhance the salty smoky flavors of the meat. You can top with a slice of grilled bell pepper for a great taste too!
  • Any leftover sausage, store in an airtight container for up to 5 days in the fridge.Always cut your smoke sausage into sausage sections of 3-4 inches and then cut in half again (like a butterfly). This makes for a correct serving of food.
  • If you are using homemade sausages that are not precooked, do not attempt to butterfly the sausage.
  • Breakfast sausage (loose sausage) can be grilled also, but you will need a grill pan or to pat into hamburger size patties so that they don't slip through the grill grates.
  • Oil the grill grates or oil the sausage (or both) to keep the sausage from sticking.
  • Once you place the sausage on the grill, don't turn a lot of toss around a lot. Allow it to sit so that char marks can develop.
  • Leftover sausages can be stored in an airtight container and used for other dinner recipes during the week (great with pasta, mac and cheese and more!)
