- 1 teaspoon grated lemon zest
- 4 tablespoons fresh lemon juice
- 1 tablespoon capers drained and rinsed under cold water, then roughly chopped
- 2 anchovy fillets minced, optional but highly recommended
- ¾ cup extra virgin olive oil
- ¾ cup Italian flat leaf parsley finely chopped
- salt and pepper to taste
