  • 4 tablespoons fresh lemon juice
  • 1 tablespoon capers drained and rinsed under cold water, then roughly chopped
  • 2 anchovy fillets minced, optional but highly recommended
  • ¾ cup extra virgin olive oil
  • ¾ cup Italian flat leaf parsley finely chopped
  • salt and pepper to taste
