Ingredients

Dressing
  • 2 tablespoons olive oil
  • 1 lemon juice of
  • 1½ teaspoons sumac
  • 1 teaspoon dried mint
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
Salad
  • 2 Persian cucumbers chopped
  • 2 roma tomatoes chopped
  • ½ red onion chopped
  • 1 yellow bell pepper chopped
  • ½ cup parsley

Instructions

  1. In a large bowl, whisk together extra-virgin olive oil, lemon juice, sumac, dried mint, salt, and black pepper. Ensure the dressing is well-blended.

  4. Toss the vegetables with the dressing and make sure all is well combined.
  5. Let it chill in the fridge for 30 minutes before serving.
