Ingredients
Cake:
- 1 carrot cake mix
- 1 box box vanilla pudding mix
- 3 large eggs
- 1/2 cup canola oil
- 3/4 cup water
- 1 cup sour cream
Frosting:
- 8 oz. cream cheese
- 2 cup powdered sugar
- 1/4 cup butter softened
- 2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F.
- In a medium mixing bowl, combine cake mix, pudding mix, water, eggs, and oil. Stir in the sour cream. Mix well.
- Coat a mini bundt cake pan using nonstick cooking spray,
- Fill each individual pan with batter using a spoon or a scoop.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool for 5 minutes in the pan. Remove the cakes from the pan and place them on a cooling rack to cool completely.
- Combine the frosting ingredients in a mixing bowl with an electric mixer.
- Fill a frosting bag with icing.
- Squeeze the icing onto the cooled cakes. Serve and enjoy!
