Cake:

1 carrot cake mix
1 box box vanilla pudding mix
3 large eggs
1/2 cup canola oil
3/4 cup water
1 cup sour cream

Frosting:

8 oz. cream cheese
2 cup powdered sugar
1/4 cup butter softened
2 teaspoon vanilla extract

Instructions

Preheat the oven to 350°F.
In a medium mixing bowl, combine cake mix, pudding mix, water, eggs, and oil. Stir in the sour cream. Mix well.
Coat a mini bundt cake pan using nonstick cooking spray,
Fill each individual pan with batter using a spoon or a scoop.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool for 5 minutes in the pan. Remove the cakes from the pan and place them on a cooling rack to cool completely.
Combine the frosting ingredients in a mixing bowl with an electric mixer.
Fill a frosting bag with icing.
Squeeze the icing onto the cooled cakes. Serve and enjoy!
