Best Shrimp Cocktail

Ingredients

  • 2 pounds jumbo shrimp peeled, deveined, tails on
  • 1 cup no-sugar added ketchup
  • 2 tablespoons prepared horseradish
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce 
  • ½ teaspoon hot sauce
  • ½ teaspoon salt divided
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat oven to 425°F.
  2. Add the ketchup, horseradish, lemon juice, Worcestershire sauce, hot sauce and half the salt into a small mixing bowl.
  3. Whisk until well combined, then chill in the fridge until you’re ready to use it.
  4. Wash and dry the shrimp, then pour them out onto a baking sheet.
  5. Drizzle the olive oil and sprinkle the salt and ground black pepper over the shrimp.
  6. Gently toss the shrimp, making sure each are well coated.
  7. Bake for 6-9 minutes or just until cooked through. Cooking time will vary depending on how larger your shrimp are. Mine took exactly 8 minutes.
  8. Remove the shrimp from the oven and allow them to cool, then chill them in the fridge until they are nice and cold.
  9. When you’re ready to serve them, place them on a platter lined with crushed ice and serve with the chilled cocktail sauce and some lemon wedges on the side.
  10. Alternatively, you can serve several in a cocktail glass placed around the rim, with cocktail sauce and a lemon slice.
  11. Another fun way to serve them is in small shot glasses with cocktail sauce and lemon.
