Best Tomato Rice Soup- Quick & Simple

Ingredients

  • 5 medium tomatoes
  • 2 cloves garlic
  • 1 cup rice
  • 1 small green chilly optional
  • 1 teaspoon lemon juice
  • 3-4 cups water
  • 1 teaspoon sesame oil
  • salt and black pepper
  • 1 twig cilantro leaves

Instructions

  1. Wash tomatoes and grate them. Also grate garlic. Wash and soak rice while we cook tomatoes.
  2. In a sauce pan, heat sesame oil and add minced garlic along with chopped green chilies and sauté until it becomes fragrant. Add the grated fresh tomatoes to the pot and cook until they become soft and start to break down.
  3. Remove water from soaked rice and add it the cooked tomatoes. Add salt and black pepper and water to soak rice on inch deep. Cover with lid and let the rice cook on slow flame. It takes about 5-10 min depending on the quality of rice.
  4. Soup with rice would start thickening up as rice gets tender and cooked. Add more water if needed. Once the rice is cooked fully, you may add lemon juice it.
  5. The delicious Tomato Rice Soup is ready. Garnish with fresh cilantro leaves and serve it with a bread crust of your choice

Notes

  • Cooking with lid on helps cook rice faster.
  • I have used Basmati rice which cook really fast, even though I soaked them for just 10 minutes while prepping.
  • Use a heavy bottomed pan so that rice don't stick to bottom of the pan.
  • It is best to add more water while cooking rice as they will anyway soak up any extra water and you can adjust consistency of soup anytime.
