When the winter ice begins to thaw and the springtime sun rears its head, you can count on a bountiful harvest of fresh, juicy strawberries. As spring turns to summer, strawberries get bigger, sweeter and juicier. There’s nothing quite like picking your own batch of fresh strawberries or getting a pound or two from the farmer’s market.

- 1 cup fresh strawberries
- 1 cup vinegar
- 3 cups water
Instructions
Wash and clean strawberries
- Add vinegar and water to a large mixing bowl. Add fresh strawberries to the mixture, stir quickly, and soak for about 1 minute.
- Rinse the strawberries thoroughly and remove any soft spots.
Remove the green leaves and dry strawberries
- Remove the green leaves. You can freeze strawberries whole or cut them into slices or quarters. (Keep in mind that the whole strawberries will take longer to defrost.)
- Place strawberries on paper towels and pat dry completely. It’s very important to make sure that your strawberries are completely dry so that they won’t get freezer-burned.
Freeze the strawberries
- Once they’re dry, place them on a baking sheet lined with parchment paper in one single layer.
- Place them in the freezer for about 4 hours or until frozen solid.
- Remove the frozen strawberries from the baking sheet and place them in freezer safe bags. Remove all air from your bags and seal tightly. Keep them in the freezer until ready to use.
