Bhindi Masala
Bhindi Masala is a spiced okra dish cooked with onion, tomato, and yogurt. The okra steeps in a sauce seasoned with garlic and ginger pastes, chili, turmeric, garam masala, and salt, producing a tender, flavorful vegetable curry. It pairs well with chapatti or other flatbreads.
Ingredients
- 500 g okra Bhindi
- 50 ml olive oil
- 2 onion
- 3 tomato
- 1 tsp garlic paste
- 1 tsp ginger paste
- 1 tsp salt
- 1 tsp chilli powder
- 1 tsp turmeric powder Haldi
- 1 tsp garam masala
- 100 g yogurt
- 2 tbsp water
Instructions
- Heat the olive oil in a pan on medium heat until hot
- Add the garlic paste and ginger paste then sauté for 1-2 minutes until fragrant
- Add the finely sliced onions and cook on medium heat for 3-4 minutes
- Add the chopped tomatoes and cook for 2-3 minutes
- Add the salt, chilli powder, turmeric powder and garam masala then cook the spices for 3-4 minutes – add the water to allow the spices to release the colour and
- Add the yoghurt then mix immediately to prevent curdling and cook for 4-5 minutes
- Add the chopped okra and mix into the spices then cover and cook on low heat for 8-10 minutes until the okra is tender
- Serve alongside some homemade chapatti and enjoy!
Notes
- Be cautious when adding yogurt; mix it quickly into the hot spices to avoid curdling.
- Cover and cook okra on low heat to ensure tenderness without overcooking.
- Serve hot with chapatti to enjoy the dish as intended.
