Description

Bhindi Masala combines fresh okra sautéed with aromatics such as garlic and ginger pastes, along with finely sliced onions and chopped tomatoes. The dish is seasoned with chili powder, turmeric, garam masala, and salt, which are simmered to develop their flavors. Yogurt is added carefully to enrich the curry, preventing curdling by mixing immediately into the hot spices.

The okra is cooked covered on low heat until tender, allowing the spices and yogurt to meld with the vegetable. This results in a creamy, spiced vegetable dish with a balanced heat and earthiness from the turmeric and chili.

This dish is typically served alongside freshly made chapatti, complementing the tender vegetable curry. It works well as part of a larger meal with rice or bread.

Ingredients

  • 500 g okra Bhindi
  • 50 ml olive oil
  • 2 onion
  • 3 tomato
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp salt
  • 1 tsp chilli powder
  • 1 tsp turmeric powder Haldi
  • 1 tsp garam masala
  • 100 g yogurt
  • 2 tbsp water

Instructions

  1. Heat the olive oil in a pan on medium heat until hot
  2. Add the garlic paste and ginger paste then sauté for 1-2 minutes until fragrant
  3. Add the finely sliced onions and cook on medium heat for 3-4 minutes
  4. Add the chopped tomatoes and cook for 2-3 minutes
  5. Add the salt, chilli powder, turmeric powder and garam masala then cook the spices for 3-4 minutes – add the water to allow the spices to release the colour and
  6. Add the yoghurt then mix immediately to prevent curdling and cook for 4-5 minutes
  7. Add the chopped okra and mix into the spices then cover and cook on low heat for 8-10 minutes until the okra is tender
  8. Serve alongside some homemade chapatti and enjoy!

  • Be cautious when adding yogurt; mix it quickly into the hot spices to avoid curdling.
