Bhindi Masala

Ingredients

  • 500 g okra Bhindi
  • 50 ml olive oil
  • 2 onions
  • 3 tomatoes
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp salt
  • 1 tsp chilli powder
  • 1 tsp turmeric powder Haldi
  • 1 tsp garam masala
  • 100 g yoghurt
  • 2 tbsp water

Instructions

  1. Heat the olive oil in a pan on medium heat until hot
  2. Add the garlic paste and ginger paste then sauté for 1-2 minutes until fragrant
  3. Add the finely sliced onions and cook on medium heat for 3-4 minutes
  4. Add the chopped tomatoes and cook for 2-3 minutes
  5. Add the salt, chilli powder, turmeric powder and garam masala then cook the spices for 3-4 minutes – add the water to allow the spices to release the colour and
  6. Add the yoghurt then mix immediately to prevent curdling and cook for 4-5 minutes
  7. Add the chopped okra and mix into the spices then cover and cook on low heat for 8-10 minutes until the okra is tender
  8. Serve alongside some homemade chapatti and enjoy!
