Big Colorful Spinach and Arugula Salad

This is a simple Salad made from Spinach, Arugula, Roasted Beets and Quail Eggs. Finish it with your choice of dressing, I made a Balsamic Basil Vinaigrette to serve with it.

Ingredients

  • 2 oz fresh spinach
  • 2 oz fresh arugula
  • 8 quail eggs
  • 2 lbs roasted beets about 3 medium sized beets
  • ¼ red onion

Instructions

    Cup of Yum
  1. Peel and slice the red onion.
  2. Layer the bottom of a large platter / plate or bowl with about a third of the quantity of Arugula.
  3. Then add a third of the quantity of Spinach.
  4. Then disperse some of the roasted beets over the greens.
  5. Now sprinkle on some of the sliced red onions.
  6. Repeat this layering process two more times with the remaining ingredients.

Notes

  • For Roasted Beets use this recipe.
  • For a homemade salad dressing, consider 5 minute Basil Balsamic Dressing.
