Birthday Cake Cookies

These Birthday Cake Cookies are the best alternative to birthday cake for the cookie lovers in your life—and they make the perfect every day treat too! They're super simple thanks to confetti cake mix, incredibly soft and fluffy, and loaded up with colorful sprinkles.

Ingredients

  • 1 (15.25 ounce) Confetti cake mix (I used Funfetti)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1/4 cup Sprinkles (optional)

Instructions

  1. Preheat oven to 375˚F.
  2. In a large bowl, combine the cake mix, oil, and eggs. Mix until smooth with an electric mixer or by hand.
  3. Place rounded tablespoonfuls of the cookie dough on a baking sheet 2 inches apart.
  4. Top each cookie with sprinkles.
  5. Bake for 9-10 minutes or until the cookies are set and no longer shiny.
  6. Cool on the cookie sheet for 2-3 minutes, then transfer to a wire cooling rack.

  • Makes about 18 cookies.
