Biscoff Cookie Butter Blondies

Ingredients

  • 1 cup unsalted butter melted (2 sticks of butter / 227 grams)
  • 1/2 cup cookie butter 120 grams
  • 1 cup brown sugar 200 g
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour 240 grams
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder

Instructions

  1. Prepare a 9-inch by 9-inch baking pan by greasing the pan with oil or butter, then lining it with parchment paper.
  2. Preheat oven to 350ºF
  3. In a large mixing bowl, add the melted butter, cookie butter, and brown sugar. Mix until light and fluffy.
  4. Then add in the eggs, one at a time, until fully incorporated.
  5. Next, sift in the flour, baking powder, and salt.
  6. Mix into the batter just until incorporated, without overmixing.
  7. Pour the batter into the prepared baking pan.
  8. Bake for 25-30 minutes, until a toothpick poked into blondie comes out clean.
  9. Cool in pan for 15-30 minutes, then remove onto a wire rack to cool completely.
