Bisquick Quiche
This Bisquick Quiche brings together diced bacon, sautéed onion, and shredded cheddar cheese in a custard of eggs, milk, and Bisquick baking mix. The baking mix replaces a traditional crust, creating a tender, slightly biscuit-like base that supports the rich, savory filling. Ingredients
- ½ pound Bacon diced
- 1 small onion diced
- 2 cups milk
- 1 cup Bisquick baking mix
- 6 large egg
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon thyme or fresh minced, dried
- 1 ½ cups cheddar cheese shredded
Instructions
- Preheat the oven to 350°F (175°C) and coat a 9-inch (23-cm) pie dish with nonstick cooking spray.
- Cook the bacon in a large skillet over medium heat until crispy.
- Transfer the bacon to a paper towel-lined plate to drain, reserving 1 tablespoon of bacon grease in the skillet. Discard any excess grease.
- Add the diced onions to the skillet with the reserved bacon grease and sauté for about 3 minutes until tender. Remove the skillet from heat and set aside.
- In a large mixing bowl, add the milk, baking mix, eggs, salt, pepper, and thyme and whisk until well combined.
- Add the cooked bacon and onion to the prepared pie dish and then pour the egg mixture into the pie plate and sprinkle the top with shredded cheddar cheese.
- Bake the quiche for 40-45 minutes, or until the center is set and no longer wiggles when you shake the dish.
- Let cool for 10 minutes before slicing and serving.

- Using freshly shredded cheese results in better melting, though pre-shredded cheese is an acceptable convenience.
