Ingredients
- ½ cup drained and rinsed canned black beans
- ½ cup thawed frozen corn
- ½ cup quartered cherry tomatoes
- ¼ cup minced red onion
- 2 tablespoons chopped cilantro
- ½ teaspoon minced jalapenos
- 2 tablespoons fresh squeezed lime juice
- 1 tablespoon extra virgin olive oil
- salt and pepper
- 1 Diced avocado
Instructions
- To a medium bowl add the ½ cup drained and rinsed canned black beans, ½ cup thawed frozen corn, ½ cup quartered cherry tomatoes, ¼ cup minced red onion, 2 tablespoons chopped cilantro, ½ teaspoon minced jalapeños, 2 tablespoons fresh squeezed lime juice, and 1 tablespoon extra virgin olive oil. Toss to combine and season with salt and pepper to taste.
- If you are making it ahead of time, cover the mixture and refrigerate until you are ready to serve. Add in the 1 diced avocado and toss gently. Serve immediately and enjoy!
