Ingredients
- 1 can (14 oz.) black beans drained and rinsed
- 1 ½ Cup corn kernels fresh or frozen (defrosted)
- 1 red bell pepper diced
- ½ avocado chopped
- 1 green onion thinly sliced
- 2 tablespoons minced cilantro
The dressing:
- 2 tablespoons extra virgin olive oil
- juice of ½ lime
- 1 teaspoon agave nectar
- ¾ teaspoon ground cumin
- ½ teaspoon kosher salt
Instructions
- In a medium-sized bowl, stir together the black beans, corn, red bell pepper, avocado, green onion and cilantro.
- Pour over the dressing and toss gently to combine. Serve.
