Black Bean & Rice Recipe
This one pot black beans and rice is flavored with pantry staples like onions, broth, and lime juice. It's simple, inexpensive, and filling for all.

Ingredients
- 1 tbsp oil olive or avocado
- 1 small onion diced
- 1 cup rice Jasmine or long grain
- 2 cups broth chicken, beef, or veggie
- 14 oz canned black beans rinsed and drained
- 3 tbsp lime juice
- 3 tbsp cilantro
Instructions
- Preheat a heavy bottom pan with oil. Add in diced onions and cook until translucent.
- Add in rice and cook until it's lightly browned.
- Add broth and beans. Cover with a lid and bring to a boil. Turn down to a simmer, cook for an additional 15 minutes.
- Remove from the heat. Add in fresh squeezed lime juice and cilantro. Season to taste and enjoy.
